Cachaça, pronounced ka-SHAH-suh, is a generic category for the Brazilian spirit distilled from fermented sugar cane juice, the production methods of which render it more aguardiente-like and less like rum. The key general distinction between cachaça and rum—particularly rhum agricole—is that cachaça is generally distilled to a lower “temperature” (alcohol purity level) than rums, a mere 30%-45% abv in many cases. This distinction alone does not explain the diversity of cachaças and their unique characters. The vast majority of cachaça is unaged, but there is a growing market of wood aged cachaça. Used most notably in the Caipirinha.
