Also known as “peptic bitters”. Pepsin bitters is a defunct 19th century bitters called for in cocktail recipe guides of the period. Made by several companies in that time period. At least one company made a combination pepsin/celery bitters. Pepsin is a natural enzyme of great importance in digestion in mammals (including humans) and can be systematically extracted from livestock stomachs for human use. Digestive aid products employing such pepsin emerged in the late 19th Century. (The carbonated sodas Pepsi and Dr. Pepper may have their origins in this fad.)
