Soju is a popular but amorphous class of Korean distilled beverages produced from a diversity of mashes. Rice is the most traditional starch, but grains, potatoes and tapioca are also common. Most soju is lightly sweetened. Soju is the traditional Korean expression of arab distilling technique imported under the Mongols, similar to the Japanese shōchū tradition.
