A “flag” is a garnish assembly of one or more wedge-shaped slices of fruit on a skewer, usually crowned with a maraschino cherry. This assembly is then stood up in an iced glass—usually some sort of tall glass—with most or all of the fruit held above the liquid… like a flag. Orange + cherry and pineapple + cherry are probably the most common combinations, but the possible configurations are numerous.
