Unless distilled to extremely high proof (in which case it is actually high proof neutral spirits), new spirit is usually fairly rough, with a complex, florid nose. “White dog” typically implies an unaged whisk(e)y distillate. New spirit can be quite interesting in itself and some distilleries have actually begun bottling and selling small quantities in response to rising interest.
