Chacmol Mezcal
Mezcal is a generic category for Mexican spirit produced in whole or in part from agave succulents, some very cheap, others produced using strictly traditional methods in tiny quantities. Tequila is the best-known variety of mezcal and enjoys legal protections. Mezcal that is not labeled “Tequila” is of a different variety. Most mezcal is unaged, although more products are entering the market that mirror the “reposado” and “añejo” categories of Tequila.
