New Orleans bartender Chris Hannah and his Tiki-inspired drinks are turning Arnaud’s restaurant bar, the French 75, into the French Polynesian 75. Chris’s secret weapon is the syrups he makes at home, then brings to work to put in his cocktails. We’re especially fond of his coffee syrup, which can stand on its own as an after-dinner dram. (Or try it in a Kiliki Cooler.) ======== 1 cup of medium-roast coffee beans 2 cups brandy 1 1/2 cups brown sugar 1 1/2 cups water Crack all the coffee beans, then place in a jar with the brandy. Seal it and let sit for three to four days, then strain the brandy. Finally, make a brown sugar syrup by heating the sugar and water until sugar dissolves. Let cool, then combine the syrup with your coffee-infused brandy. ========
