Proprietary powdered soy lecithin emulsifier. Used in haute cuisine to produce foams and to emulsify ingredients that won't otherwise. Lecithin is a common food additive employed as an emulsifier. Lecithin derived from soybeans (soy lecithin) is probably the most common in the United States, but various other sources are commercially viable and available.
