lemongrass syrup

Lemongrass syrup is generic for home-made syrup infused with fresh lemongrass. To make: Peel and slice the cores of two fresh lemongrass stalks. Place in a saucepan with 1 cup sugar and 1 cup water. Bring to a boil, stir-ring until sugar is dissolved. Lower heat, cover saucepan, and simmer for 10 minutes. Remove saucepan from heat and, keeping it covered, let sit for at least 2 hours before straining and bottling. Store it in the fridge. Note: for aesthetics and to help maintain a fresh flavor, it can be useful to stuff a few intact lemongrass stalks into the bottled syrup and leave them there.
