Also known as “gum acacia”,“Senegal gum”,“acacia gum”. Generic for an Acacia-derived (exuded) substance that is dried and milled into a powdered thickener and emulsifier/stabilizer. Myriad applications, but in the drinks context, used most famously as the texturizer for gum syrup. Be careful to use a food-grade product.
