sage syrup

Sage syrup is generic for (typically) homemade simple syrup infused with fresh sage. There are at least two strategies: hot and cold method. The hot method is quickest: simmer a bunch of sage sprigs in water, remove from heat, strain, and stir in an equal amount of sugar. Cool, bottle, and keep refrigerated. The cold method is to create a simple syrup (1 part each of sugar and water), add a bunch of sage leaves, and infuse around 24 to 36 hours (or however long it takes to achieve the flavor you are looking for).
