Maple syrup is the sugar maple tree’s concentrated sap—used in cocktails and related drink forms since the early 19th century. Maple syrup contains 67% sugar by weight, and twice the sugar by volume as regular simple syrup making it essentially equivalent to rich simple syrup and delivering 1.5X the sweetening of simple syrup by volume to a mixed drink. In other words, you could directly substitute 1/2 oz of maple syrup for 3/4 oz of regular simple syrup. Maple syrup should be stored refrigerated and monitored for mold.
