Also known as “vanilla”. Vanilla extract is an extract of the potent essential oils of the vanilla bean bottled as a preparation with alcohol and used as a flavoring in individual drinks, punches, bottled liqueurs, and spirits such as some rums. Typically, if a recipe calls for “vanilla”, it probably means vanilla extract. Alternatively, it may be a short-hand reference to vanilla-flavored liqueur.
