Cardamom is the intensely flavored, aromatic Asian spice in green and black varieties, used in a wide variety of food and beverage applications. Cardamom pods are generally purchased in dried form and are either toasted and ground before use, or steeped/cooked to extract their flavor. In unqualified use, “cardamom” can be assumed to refer to whole, dried green cardamom pods.
