Also known as “demerara sugar”,“muscovado sugar”,“turbinado sugar”. Raw sugar is a category of crystalline sugar produced fairly directly by boiling sugar cane syrup, crystalizing it, and drying it in a centrifuge. Raw sugar is, in effect, a brown sugar, but it has undergone less processing than most commercial brown sugars and tends to have larger crystal grain.
