Brandy is a generic category for liquor produced from the fermented juice and/or solids of fruit. In cocktail recipes, the unqualified specification of “brandy” almost always implies an aged grape brandy such as Cognac. If some other kind of brandy is intended, there will usually be additional context (e.g., “apple brandy” or “Spanish brandy”).
