Molasses is the thick dark-to-light brown highly-flavored syrup that is separated from crystallized sugar in the manufacture of sugar crystals from boiled sugarcane juice. Used in cocktails and related drink forms since the early 19th century. Fermented molasses is the basis of most rums.
