Also known as “margarita salt”. “Margarita salt” is generic for a packaged course sea salt of a grain size deemed appropriate (by whomever is marketing the product) for rimming the edge of a cocktail glass. There’s no actual specification for this kind of salt, but it tends to be courser than table salt without being so course that gravity defies adhering it to a glass. To rim a cocktail glass, place a small pile of salt in a dish, moisten the outside edge of the glass (usually this is done by rubbing the cut side of a slice of lemon or lime on the glass rim) and gently tap the moistened glass edge in the pile of salt until all the edge you moistened is coated in salt crystals. Invert the glass and gently shake to lose any extra salt, especially any that may have fallen into the glass.
