Also known as “apricot pit”,“apricot pits”. The apricot kernel is the relatively soft, nutty kernel inside the hard wooden shell of the apricot pit. Apricot kernels can be eaten or infused. Apricot kernels are the key flavoring agent of Amaretto liqueur and amaretto cookies and are an ancient flavoring. Note that the average apricot kernel contains a small quantity of cyanide and so should not be consumed by the handful.
