Also known as “golden syrup”,“invert syrup”. Most commonly, cane syrup refers a golden or brown mixture of the glucose and fructose byproducts of sugar manufacture, and used rarely as a sweetening agent in mixed drinks. Flavor is primarily that of molasses. Commercial brands include Lyon’s and Steen’s. This syrup can be a blend of molasses, invert sugar, and corn syrup used as a table condiment. Most drink recipes that call for “cane syrup” imply the filtered variety associated with the French West Indies, particularly Martinique.
