Also known as “piloncillo”,“panela”. Jaggery is generic for a traditional unrefined sugar produced from either sugar cane or palm sap (palm sugar) sold in semi-moist cakes. Jaggery is less intensely-sweet than refined cane sugars and possesses more flavors, comparable to (but distinct from) those that molasses lends brown sugars. Panela/piloncillo is similar to jaggery, but always made from evaporated cane juice.
