A “chocolate truffle” is generic for a homemade or commercially manufactured confection of chocolate, cream, sugar and butter. Chocolate truffles are usually straightforward—and very rich—although endless variations and elaborations exist (see Internet for recipes). A simple recipe for producing your own, supplied by Giuseppe Serra, The Palomar Restaurant, London, England: Combine 300 g of 54% chocolate and 125 g whipping cream in a saucepan over medium heat. Bring just to a boil. Add 40 g sugar, then mix in 15 g of butter. Refrigerate 24 hours, then shape into truffles about 5 grams each.
