Aromatic bitters featuring the flavors of the tonka bean, a highly aromatic seed from a South American plant. Tonka bean flavor is variously described as similar to woodruff, “grassy”, vanilla, cherry, and almond. As of this writing, tonka beans are illegal for use in consumables due to their concentration of coumarin, which is toxic in large enough doses. “Tonka bitters” was not a common cocktail ingredient, but it does crop up, such as in the Mountain Cocktail in Charley Mahoney’s “Hoffman House Bartender’s Guide”.
