Rhubarb is the tart, edible stalk of the cultivated rhubart plant. It is most commonly cooked down with sugar into a compote, but can be eaten raw, a bit like celery, or processed raw into a syrup (recommended). Rhubarb varies in color, but the color is not relevant to flavor. Note that the leaves of rhubarb are toxic and should not be consumed.
