cold-process 2:1 syrup

Cold-process 2:1 syrup is a specific homemade formulation consisting of two parts superfine sugar to one part warm water, shaken in a jar until all the sugar is dissolved. The theory is that not using heat results in a crisper syrup with a lighter density, that plays better with some preparations than a cooked syrup would.
