ginger wine

A fermented beverage produced from a cooked mash of raisins or currants, fresh ginger root (the principle flavoring), and sugar as needed. The mash is fermented, rested and, as necessary, filtered. May also be fortified as a means of production, but ginger wine is typically low proof for wine.
