sugar syrup (3:2)

0% ABV

Sugar syrup in the 3:2 ratio is uncommon in mixology, but is homemade in the same manner as rich simple syrup. This form of syrup delivers approximately 1.25X the sweetening of simple syrup by volume to a mixed drink. To make 3:2 syrup accurately and consistently, weigh three parts sugar to two part water into a pot, using a scale. Gently heat the mixture to a simmer, then to minimize evaporation, turn off the heat, and pulse with a hand blender until the sugar is completely dissolved. Cool, bottle, and store refrigerated. Sugar syrup (3:2) has a brix of 60 (weight of sugar content) and a sweetness of around 77% (weight in volume).
