Also known as “2:1 simple syrup”. Rich Simple syrup is a high-concentration water and sugar solution, typically prepared at home, but possibly commercially available. Rich simple syrup contains twice the sugar dissolved in the same amount of water as regular simple syrup, but delivers 1.5X the sweetening of simple syrup by volume to a mixed drink. In other words, you could directly substitute 1/2 oz of rich simple syrup for 3/4 oz of regular simple syrup. Rich simple syrup is two parts sugar to one part water, by weight. Granulated sugar is packable, so, to make simple syrup accurately and consistently, use a scale and weigh two parts granulated sugar and one water into a pot. Gently heat to a simmer, then to minimize evaporation, turn off the heat, and pulse with a hand blender until the sugar is completely dissolved. Cool, bottle, and store refrigerated. Rich simple syrup has a brix of 66 (weight of sugar content) and a sweetness of 92% (weight in volume). Note: there’s a long history of people making sugar syrup with volume measurements rather than weight measurements. The problem is that granulated sugar is significantly packable, and when measuring by volume, your syrup proportion can vary by as much as 16%. Consequently, syrup made by volume measurement is generally less sweet than syrup made by weight, and less consistent.
