Also known as “service ice”,“medium ice cube”. Historically, a (medium-sized) ice cube is roughly comparable in size to the larger pieces of cracked ice. Most ice cubes produced by consumer ice machines are roughly medium-sized (although they are seldom cube-shaped). In contemporary cocktail bar service, an ice cube is often somewhat larger, such as a 1.25-inch square Kold Draft cube. Some bars refer to these cubes as “service ice”.
